Ingredients

For the Filling

  • 1 coconut (grated)

  • 1 cup jaggery (powdered)

  • 1 Tbsp ghee

For the Dough

  • 2.5 cups water

  • 2 cups finely ground roasted rice flour

  • 1 Tbsp ghee

  • A pinch of salt

Filling : Mix together grated coconut, jaggery and ghee in a heavy bottomed pan. Cook on medium flame, stirring continuously till the mixture is thick. Allow to cool.

Dough : Heat 2.5 cups of water in a pan. Add salt, ghee, and rice flour. Stir continuously till dough leaves the sides of the pan. Allow to cool and knead well. Take a small ball of dough in a greased mold. make a hole in the middle and stuff with some filling. Seal the bottom. Similarly make all modakams and steam till done - about 12 minutes.
