Y’day, we really wanted to bake a cake…. we had all the reasons! Only to find out our oven was not working. Two days earlier we used it and it was perfectly fine. Anyway, we couldn’t wait for some one to fix the oven and then bake a cake; so simply chose to make a ‘Tiramisu’ instead. Since there was no cooking involved, Navya decided she would make it “all by herself” and she enjoyed thoroughly all the way – from the beginning till the end. It’s that simple a recipe. No cooking, no baking, no egg. Tastes yummy…a sweet delight to any celebration!
- 1 box of Natural Nectar Lady fingers (or any brand of your choice)
- 6 oz of chilled english double devon cream (or any heavy whipping cream)
- 8 oz of mascarpone cheese
- 1/2 cup sucanat or sugar
- 3/4 cup strong black coffee or espresso, at room temperature
- 2 Tbsp marsala (dessert wine), optional
- 2 Tbsp cocoa powder for dusting
- 1/4 cup grated dark chocolate
Line a 4 inches x 8 inches rectangular baking dish with ‘plastic wrap’. This makes it easy to remove the cake from the baking dish later. Mix the mascarpone cheese, the cream and the sucanat well in a bowl. In a small bowl, mix the coffee and marsala. Spread a thin layer of the cheese mixture at the bottom of the dish. Dip each lady finger carefully (they are so soft and easily breakable) in the coffee mixture and arrange them as a tight layer on the cheese mixture. Spread half of the mascarpone cheese mixture over the layer of lady fingers, sprinkle with some grated chocolate. Top it with a second layer of lady fingers dipped in coffee mixture and spread the remaining mascarpone mixture over it. Smooth the surface with the back of the spoon. Cover the baking dish with a plastic wrap and chill in the refrigerator for 6 hours. Take it out, remove the plastic wrap and flip the cake upside down. Sift a layer of cocoa powder over the entire dish. Garnish with some grated chocolate.
